Frozen Coconut Pecan Balls Recipe (sugar-free)

These no-bake coconut pecan date balls are a quick, nourishing treat made with just five simple ingredients. Naturally sweetened with dates and rich in healthy fats, they’re perfect for a satisfying snack or dessert straight from the freezer.

Ingredients:

  • 10 dates, pitted

  • 1/4 cup shredded coconut

  • 1/2 cup pecans

  • 3 heaping tbsp coconut oil

Prep Time:

  • 15 minutes

Freeze Time:

  • 15 minutes to overnight

Directions:

Combine in a food processor. If too oily, add more pecans or coconut. If too dry, add more coconut oil.

The mixture will be slightly crumbly.

Spoon and roll into balls and put on a baking sheet covered in wax paper.

Freeze for at least 15 minutes before eating. For the perfect cookies, freeze over night.
